Recipe Of The Month - Potato Kumara & Bacon Salad

salad Ingredients

  • 4 Large Potatoes
  • 1 Large Kumara
  • 500g of bacon rashes
  • 1 Red onion
  • 1 Spring Onion
  • ½ Cup of Aoli and ½ Cup of Mayonnaise or Sour Cream

Recipe 

  1. Peel and dice potato and kumara into bite size pieces.
  2. Toss in vegetable oil, and season with salt and pepper.
  3. Roast at 200 fan bake for about 20 – 30 minutes
  4. Allow to cool (overnight in the fridge works best)
  5. Cook rashes of bacon in frypan and cut into small pieces.
  6. Thinly slice red onion and spring onion
  7. Mix potato, kumara, bacon, onion and mayonnaise together
  8. Garnish with spring onion.

The global share market (represented by the MSCI World Gross Index) was up +4.2% in NZ dollar terms in July as the Trump administration finalised several trade agreements, including with Vietnam, Japan and the EU. Although these new tariff rates are significantly higher than the average rate before Trump’s presidency, equity markets responded positively to the fact that the new agreements reduce the risk of an escalating trade war.
